


Cherries and ricotta
This simple breakfast combination yields a delicious topping for pancakes or toast.
The combo of fresh cherries over ricotta cheese is a delicious one everybody should enjoy. It’s a great side dish, a yummy dessert, or great on toast if you are tired of bruschetta. It is so versatile.
I love this on top of pancakes or even waffles. Since it is cherry season, check out this cherry cobbler, if you have more cherries than you know what to do with.
Ingredients
- 1 pint cherries, halved and pitted
- 2 teaspoons balsamic vinegar
- 2 cups fresh ricotta cheese
- 2 tablespoons chopped almonds
Directions
In a large mixing bowl, mix together the cherries and balsamic vinegar. Let stand for about 30 minutes.
Strain ricotta of all excess water.
Place ricotta in serving bowl.
Top with cherries and almonds. I suggest refrigerating it for about 30 minutes before serving.
Garnish with fresh mint.
