


Brussels sprouts citrus salad
Brilliant use of fresh fruits and vegetables for a dynamite salad mixture.
We are all about melding unlikely flavors together for brilliant cooking, and this is a shining example. If you love Brussels sprouts, you are in luck. Here is a fun way to enjoy them that doesn't involve roasting them. These leafy greens are just as great fresh!
Ingredients
- 2 cara cara oranges
- 2 granny smith apples
- 5 Brussels sprouts
- Grapeseed oil
- Poppy seeds
- Salt and pepper to taste
Directions
Peel the oranges, removing as much pith as possible. Then cut the orange slices into wedges.
Core and cut the apples into slices, and further into wedges.
Remove any wilted leaves on the outside of the Brussels, and trim the ends. Then cut them in half and peel off the leaves.
In a large mixing combine the fruit and veggies. Toss with enough grape seed oil to lightly coat.
Mix in 1 teaspoon of poppy seeds and salt and pepper to taste.
