Blueberry yogurt ombre popsicles

Cool off and show off with these awesome three-layered gourmet frozen treats.

  • Yield: 16 mini pops
  • Prep time: 6 hours, 30 minutes

I have to say, we’ve come a long way in the popsicle department. As a kid, I was super excited to have a frozen fruit cocktail in a small paper dixie cup. The popsicles of 2017 are uber cool, with colors, flavors, twists and turns, and this one is no exception.

My thought was – ombre’s been a trendy pattern with hairstyles, tablecloths and clothing – so why not on a popsicle? These popsicles really are fun to make, a treat to enjoy, and they’ll give your kids some easy nutrition while they cool off.

  • 16 small plastic cups or mini popsicle molds
  • 16 wooden popsicle sticks
  • Layer 1:

  • 3/4 cup vanilla yogurt
  • 1/4 cup milk
  • 1 tablespoon sugar plus 1 teaspoon
  • 3 teaspoons lemon juice
  • 1/4 cup wild blueberries (small ones!)
  • Layer 2:

  • 1/2 cup vanilla yogurt
  • 2/3 cup wild blueberries
  • 1/4 tablespoon sugar
  • 1 1/2 teaspoon lime juice
  • Layer 3:

  • 2 1/2 cup wild blueberries
  • 1/3 cup milk
  • 1 tablespoon sugar

Combine yogurt, milk, sugar, lemon juice, and blend until smooth. Gently fold in blueberries. Pour into cups, and freeze until solid.

To prepare second layer, blend all ingredients, including blueberries, until smooth. Pour over first layer, and freeze until solid.
