Blackberry feta salad

These delicious berries are an easy, convenient salad addition.

Blackberries and I have a bumpy history. We had a bush behind my house, growing up, which was great. During the summer, there were always fresh blackberries.

But let’s just say I discovered on more than one occasion, you can eat too many of these delicious berries. That said, I still have to have them every summer. This salad really celebrates their freshness and just how delicious they can be.

Ingredients

  • 2 ounces fresh blackberries
  • 2 ounces feta cheese
  • Red onion slices
  • 3 ounces arugula
  • 1 teaspoon olive oil
  • 1/2 teaspoon red wine vinegar
  • Salt and pepper to taste

Directions

Whisk together the olive oil and vinegar.

Combine the arugula, onion slices, berries and feta in a large mixing bowl.

Add some of the dressing, tossing, until just lightly coated.

Salt and pepper to taste.
