


Beefsteak tomatoes with peach basil salsa
Looking for a fresh, unique and easy side dish? Look no further than these bright tomato slices with sweet peach salsa.
I had dinner at a friend’s home a while ago, and the hostess went all out serving several types of salads, meats and sides. But my all-time favorite was her tomato slices with peach salsa – I just kept going back for more. There’s something so fresh and delicious about the mixture of tomato, basil and peach and I am now absolutely hooked.
This will become an easy go-to side dish for any dinner party you host – change it up by using colorful heirloom tomatoes, or slicing the tomatoes into wedges. Any way you slice it, this dish will be a hit. Just be sure to choose ripe tomatoes and ripe peaches – their inherently sweet flavor will make all the difference.
Ingredients
- 3 large beefsteak tomatoes, sliced
- 1 large peach, diced
- 3 tablespoons fresh basil, chopped
- 1/4 cup rice vinegar
- 1/4 cup white balsamic vinegar
- 1/4 cup honey
- 3 tablespoons olive oil
- 1 large clove garlic, minced
- 1/4-1/2 teaspoon black pepper
- 1/2 teaspoon salt
Dressing:
Directions
Whisk together dressing ingredients. Pour over diced peaches.
Lay tomato slices on serving dish and spoon peach salsa over center of tomato slices. (To enhance the flavor of the tomatoes even more, you can take a basting brush and coat each slice with dressing before covering with salsa.)
Serve within a couple hours for best taste.
