


Baked broccoli with cheddar and salsa
This super-easy broccoli cheddar dish is comfort food redefined .
Like many moms out there, I raised my kids on mac ‘n’ cheese. Just didn’t know any better. Old habits die hard, so although we still like comfort food once in a while, we’ve changed the ingredients slightly. Pasta gets booted and replaced by broccoli, American cheese slithers away and makes room for good quality cheddar or mozzarella, and ketchup is squirted out the door in favor of spicy salsa.
Let me tell you – this dish is a hundred times tastier than the starchy version, and so much healthier! Try it, share it with your kiddies (hubby?), and you’ll see what I mean. If the sight of green vegetables makes them turn green, try cauliflower instead – it also works beautifully and looks a bit more like the "real thing."
Ingredients
- 16 ounces frozen broccoli florets
- 1 cup shredded cheddar or mozzarella cheese
- 1/2 cup salsa for dipping
Directions

Preheat oven to 375° F. Spread frozen broccoli out on a parchment paper-lined baking sheet.
Sprinkle generously with shredded cheese.
Bake 10 minutes, or until cheese is melted and bubbling.
Serve warm, with salsa on the side.
