Apricot almond bites

Simple fruit and nuts make the best candy on Earth.

It’s really not fair. You can walk into any shop on Earth, any gas station, airport, office building, and buy a Hershey bar. But if you’re into nature’s candy, things get a little bit trickier. And although we have seen an improvement in healthier food options, we're still hard-pressed to find vending machines that dispense apples instead of candy.

So what’s a gal to do when she’s trying to snack on nutritious treats? Whip up a batch of these little beauties, I say. And bring them to work, school, on the plane or wherever the other sweets will try to tempt you when that sugar or carb craving hits.

Ingredients

  • 1 1/2 cup dried apricots
  • 1/2 cup unsweetened coconut flakes
  • 12 almonds, cashews or pecans
  • Extra 1/4 coconut flakes, for rolling

Directions

Process apricots and 1/2 cup coconut until thoroughly combined into a sticky mass.

Use a spoon to scoop out a ball of the mixture, and press a nut into the center, and then cover it with more of the mixture. Roll until smooth.

Coat with extra coconut. Keep refrigerated until ready to serve.
