


Applesauce oatmeal muffins
This wholesome snack pairs perfectly with a cup of coffee.
There’s something so wholesome about a homemade muffin that has oats and applesauce. These satisfy that desire for something comfortably home-baked at breakfast, or when you're in the mood for a snack.
Ingredients
- 1 1/2 cup quick-cooking oatmeal (if you have a rougher cut of oats, just whizz them in the food processor briefly)
- 1 1/4 cup flour
- 3/4 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup applesauce
- 1/2 cup milk
- 1/2 cup brown sugar
- 2 tablespoons oil
- 1 egg, beaten
- 1/4 cup oatmeal
- 1 tablespoon brown sugar
- 1/4 teaspoon cinnamon
- 1 tablespoon melted butter

Directions
Preheat the oven to 375° F (190° C).
Mix dry ingredients together in a large bowl.
In a medium bowl, mix the oil, milk and beaten egg.
Make a well in the center of the dry ingredients and pour the liquids into it. Mix well, but briefly – just enough to get everything wet.

Fill muffin cups 3/4 full and top each muffin with the dry oatmeal topping.
Bake 15-20 minutes. Allow to cool 5 minutes, then remove the muffins to a rack.
They're very good with a cup of tea or coffee!
