Apple red cabbage salad
Another way to enjoy apple season, and this one is as fresh and crisp as it gets.
This fresh and healthy salad is just another way to celebrate apple season. And let's face it, we could all use more cabbage in our diets.
- 1 small red cabbage
- 3 granny smith apples
- 1 tablespoon chopped basil
- 1 tablespoon pine nuts
- 2 tablespoons grapeseed oil
- 2 tablespoons apple cider vinegar
- 2 teaspoons agave
- Salt and pepper to taste
Slice and chop the red cabbage.
Core the apples and cut them into wedges with an apple slicer. Further slice them into chunks.
In a large mixing bowl, combine the oil, vinegar, agave, salt and pepper. Whisk to combine.
Add in the apples and cabbage, mixing until fully coated.
Fold in the chopped basil.
Top with pine nuts and serve.
