


Apple and leek salad
Sweet and savory merge in perfect harmony in this unconventional salad.
Here's a fun, fresh spring salad for you. Easy to make, unique and delicious, and quite beautiful to look at. The leeks have a nice savory and bright onion flavor that is complemented by the sweetness of Granny Smith apples.
Ingredients
- 1 large leek
- 1 large Granny Smith apple
- 1/4 cup chopped almonds
- 1 tablespoon grapeseed oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
- Chopped parsley
Directions
Trim the ends of the leeks and remove a few of the outer layers. Slice them lengthwise and transfer them to a bowl. Cover them with water and add the vinegar. Let soak for 15 minutes, moving around the cut side of the leeks to expand the layers and remove any dirt. Then rinse them thoroughly and pat them dry.
Slice the leeks into quarter-inch slices.
Core and cut the apple into wedges and then slice those wedges into chunks.
Add the leeks and apples to a large mixing bowl with the oil, vinegar, and salt and pepper. Mix until fully combined.
Top with chopped almonds and parsley.
