No-bake desserts for an easy, breezy summer menu

Don't let warm weather get in the way of a delicious dessert.

The summer heat has arrived, and the last place you want to be is hovering over your kitchen stove, right?

We're right there with you, sweltering in our hunger. So we decided to dig into our archives and bring you a handful of our favorite Israeli Kitchen desserts that require no heat but yield a delightful warm-weather treat.

We have a tendency to forget about apricots unless we happen to be strolling by the peaches and plums and – poof! – there they are, those fuzzy little canary-colored gems of summer sweetness. And though we love to snack on them whole, there's also this spectacular treat you can make out of them: no-bake, three-ingredient apricot almond bites. Here's our recipe.

If you want to look like a whiz in the kitchen without even opening an oven, this pie is yours. Sweet berries, a creamy white chocolate filling and chocolate drizzle. Have fun with the topping – choose from strawberries, blueberries and/or raspberries to create your own fruity masterpiece, and then drizzle away with more melted chocolate. Here's our recipe.

You don’t have to be a sweet, weathered Italian grandmother to make a wonderful version of this creamy, gourmet dessert. The steps are simple, and the results are gorgeous. Tiramisu can be served in square pieces, a stemmed trifle bowl or individual cocktail glasses for a very elegant presentation, as in this recipe. The thing about summer desserts is that with all the fresh fruit in season, it takes very little ingredient-wise to create something amazing. This one takes five ingredients and can even be made vegan. Plus, if parfait's not your cup of tea, you can use this recipe to top waffles or pancakes, or even sponge cake for a decadent dessert.
